Scotland is renowned for the quality of its fish and shellfish. In this workshop we will be delving in to the world of fish and shellfish cookery. We’ll show you how easy it is to prepare fresh whole fish covering gutting, descaling and filleting. Moving on Sam will talk through different cooking styles including baking, poaching, stuffing and the classic but simple ‘en papillote’ (in parchment).
You will:
- Prepare and cook a whole fish and choose your own cooking style.
- Have a go at ‘shucking’ an oyster and taste it. We’ll also cover how to cook mussels.
- Following a demo from Sam use raw fish to make ceviche (cured in lemon or lime juice) or carpaccio (thinly sliced fish)
We source our fish and shellfish from our local fishmonger to make ensure we use both local and seasonal fish.
This is a hands-on cooking class. All food made can be taken away and enjoyed at home.
This workshop will be led by Samantha Kirk, our Community Chef.
Sam has years of experience as a private chef and brings a wealth of culinary skills and knowledge of both local and world cuisine to The Lang Spoon Community Kitchen.
Some cooking skills are required to enjoy this workshop i.e. basic knife skills. Please bring some containers to take home your food.

Accessibility
There are accessible parking bays available outside 8 East Fergus Place with a ramp into the building and level access throughout. There is also an accessible toilet. Our kitchen has an adjustable cooking station for those in wheelchairs or who need to sit while cooking.
