DESCRIPTION:Getting kids involved in making meals with you is a fun way to learn and cook together. SUMMARY:Pantry Classics for the Ultimate Foodie - Part 1
DESCRIPTION:Pep up your pantry staples with sauces/dips made with some creative cooking know-how. We all have kitchen cupboard staples likes rice\, pasta\, couscous that are our ‘go-to’ ingredients for dinners\, lunches and snacks. In this workshop we will be making some tasty sauces and dips from scratch that will inspire you to liven up your meals.  \nThe mother of sauces – how to prepare the simple tomato and transform into classic Bolognese\, feisty Puttanesca and spaghetti alla Norma. Prepare and sample each. \nPesto – not just your basil Pinenut favourite! SUMMARY:Eating with the Seasons
DESCRIPTION:Eating seasonally means taking advantage of the amazing local fruit and vegetables that are naturally ready to harvest and at their best. In Fife we have an array of produce on our doorstep which we can use. This cuts down on food miles and benefits our planet as well as the local food economy. We’ll be cooking with local and tasty beetroot\, and we’ll be using the first of the season’s cauliflower in two dishes. \nCauliflower – Cauliflowers thrive in Scotland due to our (usually) temperate summers. It can be enjoyed with many different flavours and pairs well with Indian spices. Although cauliflowers come in many colours from yellow to purple\, we’ll be using the traditional creamy white to make a roasted cauliflower curry.  \nBeetroot Chutney – Beetroot has a deep earthy flavour that is suggestive of Autumn and a lovely vibrant colour. We’ll use it to make a chutney which is a great way of preserving the foods we harvest now to keep for eating later. \nThis is a hands-on cooking class. SUMMARY:Italian Bread Making
DESCRIPTION:Bread making is a skill that requires some patience\, but when you master some basic techniques\, you will be able to make many different products. In this class we will be making two very popular and versatile breads from Italy. \nYou will make a dough from scratch and practice kneading. You will take your dough home to practice on too. Using a dough that has been maturing for 48 hours\, you will make and bake two types of Italian Bread in the class:  \nFocaccia – This bread requires a delicate touch to achieve a light fluffy bread. We will use classic flavours rosemary and garlic\, and we will experiment with other toppings. \nPizza bread– A thin crispy pizza base is a great thing to be able to make and is a family favourite that allows you to be creative with a range of toppings and flavours.  \nThis is a hands-on cooking class. All dishes made can be taken away and enjoyed at home. \nThis workshop will be led by our Community Chef Iain McLellan\, a skilled and talented Head Chef with over 20 years cooking experience. DESCRIPTION:The REHIS Elementary Food Hygiene Certificate is a practical course designed to give food handlers a basic knowledge and understanding of the causes of food poisoning\, measures for prevention and the legal aspects of food hygiene in Scotland. \nAnyone working directly with food as a food handler is required to be trained in food hygiene. A food handler is anyone that comes into contact with food directly or indirectly \nThe course will cover: \n• An introduction to food hygiene \n• Bacteria and their characteristics \n• Food poisoning and it’s prevention \n• Personal hygiene and food handling \n• The working environment \n• Food pests and how to control them \n• Effective cleaning practices \n• HACCP and food legislation \nThis course will give you the knowledge and skills to work with and comply with food safety and hygiene practices. It is relevant to anyone working or intending to work in hospitality and catering; the care sector; food retailing and food processing; and anyone who is interested in food hygiene. It is also relevant to anyone working or volunteering with food in community projects: foodbanks; food redistribution projects such as larders and pantries; community shops; cooking skills classes and much more. \nThe course is 6 hours in total and includes a multiple-choice test to achieve the certificate. The certificate is awarded by the Royal Environmental Health Institute of Scotland known as REHIS. Greener Kirkcaldy is a community-led charity and development trust working locally to combat the climate emergency\, tackle fuel poverty and food insecurity\, and bring people together for a more sustainable Kirkcaldy. SUMMARY:A Taste of Spain
DESCRIPTION:Spanish cuisine has many influences that have fresh and bold flavours to its cooking. In this class we will explore some of Spain’s most popular ingredients like saffron\, garlic\, olive oil\, sherry vinegar. Using these we will make two of its most famous dishes \nGazpacho – This is an understated tasty and fresh classic that is simple to make using fresh ingredients and good quality Spanish olive oil. It originated in the Andalusian region of Spain. \nPaella – Probably the best know dish from Spain with Moorish influences from the use of rice and saffron. It can be made with seafood\, meat or just with vegetables. We’ll be cooking with Chorizo to give it a punchy Spanish taste. You can choose from a selection of ingredients to make your paella (vegan options available). \nThere will be a demonstration of a few easy side dishes and dips to taste. SUMMARY:A Taste of Korea
DESCRIPTION:In this evening cooking class we will discover the flavours of Korea. \nTo begin we will prepare one of Koreas favourites\, ramen.  This exciting dish of punchy broth is served with noodles\, a selection of vegetables and meat. We will then explore the flavours and versatility of Kimchi by adding it to a fried rice dish. Kimchi\, one of Korea’s best known side dishes\, is made from salted and fermented vegetables and fragrant\, spicy flavourings. \nRamen– Learn how to make an intense broth with complex flavours while discovering new ingredients and flavours. Choose from a meat or vegetable version \nKimchi Fried Rice– Making fried rice is a skill that opens up lots of different options for you to make at home\, adding kimchi adds something special to a fried rice dish along with all the other Korean flavours. \nAbout this event\n\n\nThis is a hands-on cooking class. DESCRIPTION:Across the globe\, tapas or “small plates” are an increasingly popular way of serving food. This class will explore dishes from two countries famous for their small plates\, China and India. \nFirst we prepare Chinese spring rolls with a sesame salad\, then keema parathas from India\, served with fresh cucumber raita. \nSpring Rolls \nThis popular finger food is packed full of flavour and texture. We will choose a duck or vegetable filling then master the art of rolling. To go with this we will create a toasted sesame salad with crisp vegetables. \nFilled Parathas  \nFlatbreads stuffed with a rich\, flavoursome lamb or lentil filling. DESCRIPTION:Learn to cook with the fresh flavours of Thailand. In this cookery class we will make a starter and a main course to take home and enjoy. We will make Thai Fishcakes or Thai Sweetcorn Fritter (vegan) along with a dip and a Massaman Curry (meat or vegan). \nThai Fishcakes or Sweetcorn Fritters- This dish gives you a chance to play around with all the Thai flavours to make your fishcakes or fritters. We will also make Nam Chim Kai (Thai Sweet Chiili Sauce) as a dip to take away and enjoy at home. \nMassaman Curry- This in a truly exciting fusion dish. It is thought that Persian traders headed to Thailand carrying Indian spices and flavours and combined with traditional Thai flavours to make the Massanman Curry. DESCRIPTION:In this class we will be making two very popular street foods from South America\, and learn about other exciting dishes from this part of the world. \nEmpanadas– This delicate savoury pastry is enjoyed in many South American countries. We will blend a spice mix and use this to make some classic dishes from this part of the world. \n  \nMake you own Ras El Hanout– This is a classic Moroccan spice mix which translates to “Head of Shop” as it was a blend of the spices from the top shelf in spice stores. \nMoroccan Stew – Slow cooking is very popular in this region. DESCRIPTION:From Tortellini in Brodo in the north to Puttanesca in the south\, Italy boasts a variety of pasta dishes. Flavours can be robust and spicy or mild and soothing. Pasta is diverse and always delicious\, making it one of the world’s favourite foods. \nIn this class we will begin by making a fresh batch of pasta. You will then use this to prepare two dishes. \nTortellini- stuffed with a butternut squash filling then folded by hand. DESCRIPTION:We have some amazing seafood here in Fife\, and Scotland has some of the best in the world. While a lot of it is exported\, it could be enjoyed more here in Scotland. SUMMARY:Pickling and Fermenting
DESCRIPTION:In this class you will create your own flavour combinations as you learn effective and safe methods for pickling and fermenting foods.\n\n\n\n\n\n\n\n\nUsed to preserve food for long journeys\, especially by sea\, these techniques can be traced back to ancient times (approx. 2500BC). With interests in seasonal cooking on the increase*\, methods such as these have grown in popularity. \n• Piccalilli (mustard pickle from Asia) \nThis homemade version is very versatile and much different to shop bought. You will add and control your own complex flavours to suit your taste. \n• Kimchi (a tangy\, fermented sauce) \nThis popular Korean staple is a good starting point to learn about fermentation. As it matures the flavours develop to give it a real spicy kick. \n• Beetroot Chutney (an Indian sauce) \nChutneys are a great way to use up many things that you have in abundance\, and an exciting way to experiment with different flavours. Getting the balance of sweet and sour is the key. \n  \nIn the class we will have a tasting session letting you taste different pickles and fermented products. DESCRIPTION:In this class you will be introduced to the Spanish style of cooking\, Tapas\, which has become very popular here in the UK. Tapas comes from the Spanish word “tapar”\, which means “to cover” or “lid”. Traditionally they are small savoury dishes\, snacks or appetisers. Being really popular\, they are a great way to enjoy many different flavours as a snack or main meal all at the same time! While we move towards increased flexibility in our lives\, we can think more about eating with others. \nIn this workshop we will prepare a three-course meal for four people that will be easy to serve. DESCRIPTION:A workshop will take you on a journey through the main flavour influences of Asian food. These flavours come from India (curries and spices) in the west\, China (seasonings and cooking methods) in the east\, and the Americas (chilies). In this workshop you will learn how to create key dishes from Asian cuisine: \n\nLaksa – Laksa is a noodle soup from Southeast Asia. It’s fragrant flavour is defined by the paste created to dilute the broth This dish can be made with chicken\, prawns or vegetables (Vegan)\nDal Makhani with Punjabi Aloo Parathas – A luxurious black lentil and kidney bean dal dish with a delicate balance of flavours.
