SUMMARY:A Taste of Scandinavia
DESCRIPTION:Hygge – a word in Danish and Norwegian that describes a cosy\, contented mood. \nFood and cooking are a big part of the Hygge philosophy\, especially as we head into colder and darker days. Investing time and energy in homemade and hearty food adds a feeling of Hygge to a gathering around the table. The food itself doesn’t have to be advanced or fancy. If it’s down to earth\, it adds to the Hygge rather than distracting from it. You will leave this class with some foodie ideas to bring some Hygge to your home during the Winter months. \nYou will make: \n• Kød og melboller suppe (Meatball and Dumpling soup): This is a comforting vegetable broth filled with meat dumplings and sure to warm you up. A veggie/vegan version will be available. \n• Kanelsnegl (cinnamon buns): These are a staple in Denmark\, and are enjoyed at any time of the day or year. This recipe lets you bake them to your own preference\, whether you like them gooey or crispy. \nWe will also demonstrate how to make hasselback potatoes with gruyere and rosemary\, which is a wonderful warming side dish for any main course and is especially good at this time of year. \nThis is a hands-on cooking class. All food made can be taken away and enjoyed at home. Please remember to bring your own containers to take home your creations. \nPlease wear appropriate clothing for a kitchen environment e.g. closed-toed shoes. SUMMARY:Introduction to sourdough baking
DESCRIPTION:This workshop is an introduction to baking with wild yeast to create sourdough bread and baking. We’ll discuss the fundamentals of baking with wild yeasts\, the methods of creating a sourdough starter\, and how to look after it. Sourdough making is a slow process to allow the natural yeasts to work so we’ll have plenty of time to discuss\, taste and ask questions. We’ll look at ingredients and techniques – and how to fit sourdough bread making into your life. \nWe’ll send you instructions on how to make a starter to bring to the workshop so that we can discuss (but don’t worry we’ll have some pre-made starter for you to use). \nWe’ll bake a Sourdough Loaf using our sourdough starter. You’ll use your own starter to create a Sourdough Cake and we’ll make Sourdough Pizza for lunch. \nThe course is suitable for beginners. \nThis is a hands-on cooking class with lots of hand kneading. All dishes made can be taken away and enjoyed at home. \nThis workshop will be led by Jackie Vural\, an enthusiastic cook of many cuisines with a passion for breadmaking. SUMMARY:Happy gut health - kombucha and more!
DESCRIPTION:Did you know people started sipping kombucha over 2\,000 years ago? This was at the beginning of China’s Qin Dynasty\, back in 221 BCE. However\, it wasn’t a cup of kombucha they were drinking then. No\, one needs a “Tea of Immortality” whilst constructing The Great Wall of China. \nIn this short workshop\, we introduce you to nourishing fermented drinks. Through discussion and hands-on activities\, we’ll explore how fermentation works. \n\nWe’ll start with homemade kombucha. First\, we’ll Introduce you to the SCOBY and how to look after it\, so you can keep making this delicious drink at home. Then we’ll taste a few flavour combinations to encourage you to experiment with your own ideas.\nNext up it’s sourdough fizz. Here we’ll discuss how to use your sourdough starter to make this tasty drink.\nFinally\, we’ll try water kefir and start a small batch of this for you to ferment at home.\n\nWe’ll leave you with some recipes and the confidence to brew these delicious drinks at home. \nThe course is suitable for beginners and people with a bit of experience. DESCRIPTION:Whatever form of cycling you choose\, you need to think about fuelling your body. Whether you’re cycling for fun\, exercise or commuting\, this class is for you. Once you’ve got the hang of preparing these appetizing travel snacks\, it’s time to plan your trip! \nThis event is part of the Kirkcaldy Cycling Festival and is free thanks to funding from Smarter Choices Smarter Places. \nAttendees at the event will have the opportunity to enter the Kirkcaldy Cycling Festival prize draw. \nHere’s what we’ll be making: \nSpanish Tortilla – a classic potato and onion eggy snack. \nChocolate Fudge Muffins – Fluffy muffins with a super sweet twist. \nWe’ll also demonstrate how easy it is to make Energy bites – a quick no-cook recipe combining fruit\, nuts and seeds that you can make in bulk and store. \nYou can try some of our own homemade cereal bars on arrival. We’ll also give you some handy tips for a cycling picnic. \nThis is a hands-on cooking class. SUMMARY:Introduction to sourdough baking
DESCRIPTION:This workshop is an introduction to baking with wild yeast to create sourdough bread and baking. We’ll discuss the fundamentals of baking with wild yeasts\, the methods of creating a sourdough starter\, and how to look after it. Sourdough making is a slow process to allow the natural yeasts to work so we’ll have plenty of time to discuss\, taste and ask questions. We’ll look at ingredients and techniques – and how to fit sourdough bread making into your life. \nWe’ll send you instructions on how to make a starter to bring to the workshop so that we can discuss (but don’t worry we’ll have some pre-made starter for you to use). \nWe’ll bake a Sourdough Loaf using our sourdough starter. You’ll use your own starter to create a Sourdough Cake and we’ll make Sourdough Pizza for lunch. \nThe course is suitable for beginners. \nThis is a hands-on cooking class with lots of hand kneading. DESCRIPTION:Did you know that humans have been fermenting food for over nine thousand years? This ancient practice has developed over the years. Today it can be used to reduce the risk of diseases and enhance your digestive system. \nIn this short workshop at our Lang Spoon Community Kitchen you will learn all about nourishing ferments and happy gut health. Through discussion and hands-on activities\, we’ll explore how fermentation works and look at the difference between probiotics and prebiotics. DESCRIPTION:If you like your food full of flavour and with a little kick\, then an evening of Mexican cooking will be a real treat. Mexican food is full of diverse ingredients and influences. We’ll be making some traditional Mexican dishes using some essential ingredients of the country. This includes corn\, beans\, chillies\, coriander\, oregano and cumin. \n\n\n \n\n\nYou will be making:\n\n\n\nFresh Corn Tortillas from scratch – naturally gluten free pale yellow in colour and entirely adaptable for zingy flavours. These quick and easy tortillas will transform your tacos! \n\n\nPulled Smokey Mushrooms – move over pork\, ‘meaty mushrooms’ have stepped up and will pep up your tacos with sticky sweet and smoky flavours \n\n\nPico de Gallo – a traditional tomato salsa available in all taco trucks\, and Sam will demonstrate a Sweetcorn and Pineapple version – fruity and piquant. \n\n\nRefried Beans – Sam will demonstrate how to make this slow cooked pinto or black beans dish which will simmer with gentle warming spices as you cook. SUMMARY:Fish and shellfish workshop
DESCRIPTION:Scotland is renowned for the quality of its fish and shellfish. In this workshop we will be delving in to the world of fish and shellfish cookery. We’ll show you how easy it is to prepare fresh whole fish covering gutting\, descaling and filleting. Moving on Sam will talk through different cooking styles including baking\, poaching\, stuffing and the classic but simple ‘en papillote’ (in parchment).  \nYou will: \n\nPrepare and cook a whole fish and choose your own cooking style. \nHave a go at ‘shucking’ an oyster and taste it. We’ll also cover how to cook mussels. \nFollowing a demo from Sam use raw fish to make ceviche (cured in lemon or lime juice) or carpaccio (thinly sliced fish)\n\nWe source our fish and shellfish from our local fishmonger to make ensure we use both local and seasonal fish. \nThis is a hands-on cooking class. DESCRIPTION:Street food are foods made to eat on the go and sold from stalls and markets. Having originated in Asian countries\, they are popular all over the world and a regular addition to the High Street and both indoor and outdoor events. In this workshop we’ll show you how to recreate your own at home. Perfect for a party or barbecue in the garden.  \nBroad bean and chickpea falafels with flatbreads\, salad and tahini sauce – a classic Turkish street food made with a mix of dried beans and chickpeas\, formed into little balls and dipped in sesame seed.  \nGreen pea and caramelised onion Socca pancakes with tomato and olive – an Italian inspired flourless pancake made with green pea flour that is popular on the Ligurian coast from Nice to Sardinia.  \nJamaican Jerk Bowls – marinated and charred sticky sweet and spicy tofu served with sticky coconut rice and beans  \nThis is a hands-on cooking class. DESCRIPTION:This course is perfect for anyone who has been on our bread making for beginners’ course or has some experience of making bread at home.  \nIn this fun and informative workshop\, you’ll learn basic recipes to bake your own loaves at home\, and how they can be adapted to create a variety of different types of bread. We’ll look at the ingredients and techniques – and how you can incorporate bread making into your daily life. There will be time to discuss\, taste and compare notes too. In this extended\, 4-hour workshop you will be making from scratch:  \nSpelt and walnut bread: Spelt is an ancient variety of wheat grain (contains gluten) that has a nutty\, tangy flavour. It was a staple food up until medieval times and is growing in popularity again.  \nFocaccia: A flat\, leavened\, oven-baked Italian bread. Soft on the inside with a crispy exterior\, it can be eaten on its own\, sliced and filled\, or topped with your favourite ingredients.  \nItalian-style sundried tomato and herb rolls: Sticking with an Italian theme\, these rolls are infused with classic flavours of Italy\, giving the bread a sweet and vibrant taste.  \nYou’ll leave inspired and ready to experiment at home.  \nThis is a hands-on cooking class with lots of hand kneading. DESCRIPTION:Whether you like baking or have never baked before this workshop is for you. We’ll show you how to make some classic cakes to impress\, and talk about the principles behind what makes bakes rise and taste delicious every time. We’ll also introduce some basic techniques that can be used to create a range of delicious treats. There will be time to discuss\, taste and compare notes too. \nIn this extended\, 4-hour workshop you will be making from scratch: \n\n\n\nA Victoria Sponge cake – A light and fluffy sponge cake with buttercream and jam. A delicious addition for any cake table that can also be adapted for celebrations and special occasions. \nA Lemon Drizzle cake – A tasty teatime or any time treat with a zesty lemon flavour and icing. \nLight and fluffy scones – With its origins in Scotland\, scones are an essential part for a traditional cream tea. DESCRIPTION:In this cooking workshop you will explore the flavours of Thailand and make some authentic dishes: two main courses; a side dish; and a dipping sauce: \nKaeng Lueang (Yellow Curry) – a delicious\, coconut-rich dish simmered in fresh curry paste filled with galangal\, cumin and chillies – delicious with chicken\, fish or tofu. \n(Pleases indicate when booking if you want to cook with chicken\, fish (white fish) or tofu. \nPad See Ew – a commonly eaten quick and easy street food noodle dish (Veggie). \nSatay-style beans – a Thai-inspired side dish using freshly made satay – great for jazzing up green veggies \nNam Som Prik Dom – marinated chillies using classic Thai flavours. DESCRIPTION:“Hygge” is a Danish word that does not have a direct English translation but means the general feeling of cosiness and it is often associated with all the home comforts that make you feel cosy in the winter. A big part of that is baking! \nIn this workshop you will bake and sample some classic Scandinavian food to give you that “Hygge” feeling. \nCinnamon buns – we’ll make fragrant Scandinavian style cinnamon buns to have for fika (afternoon tea) \nSaffron buns – traditional St Lucia buns flavoured with saffron. \nMulti seeded rye and oat crispbread – perfect to eat with hummus or cheese. \nYou will also get to sample some Scandinavian delicacies and refreshments. \nThe course is suitable for beginners. \nThis is a hands-on cooking class with lots of hand kneading. DESCRIPTION:Middle Eastern Food is rooted in a variety of cultures from around the Mediterranean\, Red\, Arabian\, and Caspian Seas. Its main flavours are rich in aromatic\, fragrant herbs and spices loaded with grains and very colourful.
