SUMMARY:Taste of Sicily
DESCRIPTION:Sicilian cuisine is a fusion of Mediterranean flavours influenced by Italy and North Africa. It also includes elements of other cultures of previous inhabitants including Spanish\, Arab and Greek influences. This leads to an intriguing mix of flavours and styles of cooking and gives us much to explore! \nThe island is mostly self-sufficient with a year-round growing season\, meaning it grows a large amount of the produce consumed – everything is fresh and local\, in season and full of flavour. \nJoin us for our Taste of Sicily workshop where we will make three authentic dishes and discuss how they can be adapted to include seasonal ingredients. \n\nArancini – balls of risotto rice stuffed with mozzarella cheese\, coated in breadcrumbs and fried\nCaponata – a delicious stew of aubergines\, peppers and tomatoes with a sweet/sour flavour\nBignolati – stuffed bread with Swiss chard\, olive and potato filling\n\nWe’ll also demonstrate and taste pesto alla Trapanese made with tomatoes and almonds\, foods local to Sicily. \nOur workshops are fun and informal\, our tutor will support you to prepare the recipes\, we’ll chat and answer questions as we go. \nWe’ll look at the ingredients and techniques – and basic principles so you can adapt recipes the to include variations. Light refreshments and snacks will be provided. \nThe course is hands-on\, making our creations from scratch and there will be time to discuss\, taste and compare notes. \nThe course is suitable for beginners and people with some experience who are interested in trying out something new. Please bring 3 containers to take your creations home. \nAll recipes are suitable for vegetarians and can be adapted for vegans. Please note wheat and dairy will be used in the workshop\, but we can adapt if we are able. In this 2-part programme of workshops we will look at how we can make more climate-friendly food choices in our daily lives. Join us for our Plate Up for Fife workshop programme where we will focus on two themes: \nWorkshop 1: Reducing our food waste – Thursday 26th September – 6pm – 8pm. We will be talking about common foods that get thrown away and exploring ways to change that. You’ll also be making a dish with leftovers! \nWorkshop 2: Eating locally and seasonally – Thursday 3rd October 6pm-8pm. We’ll be talking about the benefits of eating with the seasons and ways to access local ingredients and you’ll make a dish using seasonal vegetables. \nWe’ll also be discussing ways we can reduce our meat and dairy consumption\, reduce packaging and eat healthily. SUMMARY:Taste of the Levant - traditional Meze
DESCRIPTION:Levantine cuisine is a mix of culinary traditions from an area of the Middle East broadly made up of Lebanon\, Syria and Jordan. The cuisine has been influenced over years by various cultures and civilisations including the Greeks\, Romans\, Ottomans and Arabs. It is noted for fresh\, locally sourced ingredients\, grains\, spices and olive oil\, legumes and vegetables along with fish\, dairy and wine. \nJoin us for our Taste of the Levant workshop where we will make 3 authentic meze dishes. \n\nFul medames – a stew made of fava beans cooked with tomatoes\, herbs and olive oil\nBaba ghanoush – a dip made from baked aubergine flavoured with garlic and lemon.\nKhubz – a Lebanese pitta bread\n\nWe’ll also demonstrate how to make quick pink pickled onions to go with your dishes. \nAll recipes are suitable for vegans and vegetarians. DESCRIPTION:Our workshop will introduce you to making nourishing fermented drinks\, flavoured with seasonal ingredients\, that are great for your gut. We’ll explore how fermentation works with a mix of discussion and practical hands-on activities. \nhomemade kombucha – we will introduce you to the SCOBY and discuss how to look after it so that you can keep making this delicious drink at home. DESCRIPTION:Southern India’s fertile climate produces an abundance of fruits\, vegetables\, and seafood\, which influences its vegetarian and pescatarian-based cuisine. Coconut milk and hot spice blends add depth to dishes. We will be talking about common foods that get thrown away and exploring ways to change that. You’ll also be making a dish with leftovers! \nWorkshop 2: Eating locally and seasonally – Thursday 30th May 6pm-8pm. We will use some of these to make two tasty dishes together. In this class we are using cauliflower and spring onions \nYou will make: \nVegetable Baked Korma – This is a mild curry that is made in one pot. You can cook and share this with your family and make it as spicy as you like. \nEasy banana pancakes – this is a great breakfast recipe to use up bananas that have gone squishy. It is super easy to make and the pancakes come out nice and fluffy. They could also be used for a school snack. \nThe kids cooking club encourage children to learn new skills in a fun and friendly environment. DESCRIPTION:Africa is home to hundreds of different cultural and ethnic groups and its’ diverse food is reflected in many different local culinary traditions. \nIn this class\, we will be making dishes from three different cultural areas of Africa. All the dishes contain fresh ingredients connected to the land as is traditional in Africa and are full of big\, bold flavours. \nYou will make: \n\nNorth African soup – Think of this soup like a minestrone but with lots of bold North African flavours. The addition of Rose Harrisa adds real depth to the flavour.\n\n\nJollof chicken pilau curry – traditionally from the countries within West Africa\, this is a hearty one-pot meal. We will make salted cucumber to serve alongside this.\n\nWe will also demonstrate a dish from Southeast Africa making a typical Ugandan street food snack – Rolex (or rolled eggs). \nThis workshop will be led by Kat Riach. DESCRIPTION:Veganuary has inspired and supported millions of people to try vegan since 2014. People from almost every country in the world get involved. It is a month-long challenge taking place in January that encourages people to make vegan choices. This is a time when a lot of people think about adapting their diet by reducing foods like meat and dairy. \nDid you know that you can make sweet treats plant-based by using some simple switches in the ingredients? In this workshop\, we’ll introduce you to some new techniques to create delicious\, indulgent bakes without using eggs butter and milk. \nWe will be making: \n\n\nA luscious chocolate cake \n\n\n\n\nLight fluffy scones \n\n\n\n\nMillionaire’s shortbread. \n\n\nWe’ll cover some basic principles so you can adapt recipes to be dairy-free. We’ll discuss substitutions for eggs in a range of baked goods and the best plant-based options to ensure your baking is light and delicious \nThe course is hands-on – we’ll make everything from scratch. DESCRIPTION:Homemade gifts can be both unique and personal as well as a lovely gesture to receive. The recipes you will make in this class can be made well ahead of gifting\, will store well\, and also make a last-minute gift easy! \nWe’ll have a Christmas playlist and some mulled drinks to enjoy as you learn some basic recipes which you can then adapt to create different variations. \nYou will make: \n\nFestive fudge – a very easy to make fudge with a lovely crumbly texture that is sure to impress your friends and family. There will be a variety of optional additions to add to your fudge.\nPiccalilli – a lovely cauliflower chutney to serve with cold a cheese plate. Once sealed\, it will keep for 3 months and make a perfect Christmas gift.\nGingerbread syrup – We will demonstrate how to make an easy syrup that adds an impressive twist to any coffee or hot chocolate. Once bottled\, it will keep for up to 1 year.\n\nWe’ll also show you some great ideas for decorating jars and bottles to give a professional finish to your gifts. \nWe will have some festive refreshments to eat and drink too. \nThis is a hands-on cooking class\, suitable for beginners or people with some baking experience or interested in learning new techniques. DESCRIPTION:‘Stir up Sunday’ which usually occurs at the end of November is traditionally the time to make a festive pudding. Home cooks would lay aside their usual tasks to make this rich\, fruity pudding well in advance to give it to mature. \nGet the festive season off to a great start with some Christmas baking at our ‘Stir up’ Saturday workshop\, an introduction to baking for the festive season. DESCRIPTION:Hygge – a word in Danish and Norwegian that describes a cosy\, contented mood. \nFood and cooking are a big part of the Hygge philosophy\, especially as we head into colder and darker days. Investing time and energy in homemade and hearty food adds a feeling of Hygge to a gathering around the table. The food itself doesn’t have to be advanced or fancy. If it’s down to earth\, it adds to the Hygge rather than distracting from it. You will leave this class with some foodie ideas to bring some Hygge to your home during the Winter months. \nYou will make: \n• Kød og melboller suppe (Meatball and Dumpling soup): This is a comforting vegetable broth filled with meat dumplings and sure to warm you up. A veggie/vegan version will be available. \n• Kanelsnegl (cinnamon buns): These are a staple in Denmark\, and are enjoyed at any time of the day or year. This recipe lets you bake them to your own preference\, whether you like them gooey or crispy. \nWe will also demonstrate how to make hasselback potatoes with gruyere and rosemary\, which is a wonderful warming side dish for any main course and is especially good at this time of year. \nThis is a hands-on cooking class. All food made can be taken away and enjoyed at home. SUMMARY:Introduction to sourdough baking
DESCRIPTION:This workshop is an introduction to baking with wild yeast to create sourdough bread and baking. We’ll discuss the fundamentals of baking with wild yeasts\, the methods of creating a sourdough starter\, and how to look after it. Sourdough making is a slow process to allow the natural yeasts to work so we’ll have plenty of time to discuss\, taste and ask questions. We’ll look at ingredients and techniques – and how to fit sourdough bread making into your life. \nWe’ll send you instructions on how to make a starter to bring to the workshop so that we can discuss (but don’t worry we’ll have some pre-made starter for you to use). \nWe’ll bake a Sourdough Loaf using our sourdough starter. You’ll use your own starter to create a Sourdough Cake and we’ll make Sourdough Pizza for lunch. \nThe course is suitable for beginners. \nThis is a hands-on cooking class with lots of hand kneading. SUMMARY:Happy gut health - kombucha and more!
DESCRIPTION:Did you know people started sipping kombucha over 2\,000 years ago? This was at the beginning of China’s Qin Dynasty\, back in 221 BCE. However\, it wasn’t a cup of kombucha they were drinking then. No\, one needs a “Tea of Immortality” whilst constructing The Great Wall of China. \nIn this short workshop\, we introduce you to nourishing fermented drinks. Through discussion and hands-on activities\, we’ll explore how fermentation works. \n\nWe’ll start with homemade kombucha. First\, we’ll Introduce you to the SCOBY and how to look after it\, so you can keep making this delicious drink at home. Then we’ll taste a few flavour combinations to encourage you to experiment with your own ideas.\nNext up it’s sourdough fizz. Here we’ll discuss how to use your sourdough starter to make this tasty drink.\nFinally\, we’ll try water kefir and start a small batch of this for you to ferment at home.\n\nWe’ll leave you with some recipes and the confidence to brew these delicious drinks at home. \nThe course is suitable for beginners and people with a bit of experience.
