SUMMARY:Easter baking - cakes\, pastries and buns
DESCRIPTION:This workshop is an introduction to baking seasonal Easter themed cakes and buns\, learning techniques that can be used to create a range of delicious treats. Join us to make \n\nClassic hot cross buns filled with spices and fruit\nFlaounes – delicious cheese filled pastries from Cyprus traditionally eaten at Easter\nChocolate hazelnut cupcakes with mocha buttercream\, topped with a mini chocolate egg\n\nOn our fun and informative workshop\, you’ll learn some basic recipes that you can then adapt at home to create a variety of options. We’ll look at the ingredients and techniques – and basic principles so you can adapt recipes the to include variations. We’ll discuss ingredients and techniques to ensure your cakes and bakes are light and delicious. \nThe course is hands-on – we’ll make our cakes and buns from scratch. There will be time to discuss\, taste and compare notes. You’ll leave inspired and ready to experiment at home. \nThe course is suitable for beginners and people with some experience interested in trying out something new. Please bring large boxes and a bag to take home your creations. \nThis workshop can be adapted to suit your dietary requirements. SUMMARY:Cook and dine - Spanish style tapas
DESCRIPTION:Join us for our tapas workshop where we will make a range of authentic Spanish small plates and then we’ll get together to eat our creations and discuss the recipes and flavours. \nTraditional tapas are sharing plates of appetisers/snacks that are eaten in the company of family and friends. It’s a sociable occasion usually accompanied by cold drinks. \nThe tapas we’ll prepare includes: \n\nTortilla espanola – slow cooked potato omelette\nAlioli – roast garlic sauce to accompany the tortilla\nCroquetas de jamon/Croquetas de queso – croquettes made with ham or cheese\nRomesco sauce with griddled vegetables\nBerenjenas con miel – fried aubergine with honey\nPatatas bravas – fried potatoes with tomato and smoked paprika sauce\n\nWe’ll serve this alongside some Spanish olives\, cheese and cold meats and the classic pan con tomate to complete the tapas experience. \nOur workshops are fun and informal\, our tutor will support you to prepare the recipes. SUMMARY:Scandinavian baking
DESCRIPTION:Explore Scandinavian style baking using sweet yeasted doughs and creating a traditional crispbread. \nWe’ll make: \n\nFragrant Scandinavian style cinnamon buns to have for fika (afternoon tea)\nSaffron buns traditionally eaten to celebrate St Lucia day (but delicious all year round)\nMulti seeded rye and oat crispbread to eat with hummus or cheese.\n\nOn our fun and informative workshop you’ll learn some basic recipes that you can then adapt at home to create a variety of options. \nWe’ll look at the ingredients and techniques – and how to fit baking into your life. \nThe course is hands-on – we’ll make our enriched dough and then shape and create it into the cinnamon buns\, we’ll use delicate saffron fronds to infuse the dough for our St Lucia buns and shape them into the traditional form. DESCRIPTION:Moroccan cuisine has a variety of influences due to trading with other cultures over the centuries. We can see the influence of Arab\, Andalucian and Berber cultures\, using locally produced fruit\, vegetables\, grain\, seafood and meat. Spices are warm rather than hot and include ras el hanout. Saffron and herbs are used liberally\, salads feature at all meals and mint tea is often drunk at the end of a meal. \n \nIn our workshop we are making three authentic Moroccan dishes: \n\nHarira – a fragrant soup made with chickpeas and lentils\nTagine with couscous – a vegetable or chicken tagine served with traditional couscous\nBissara – a dip made with broad beans\n\nWe will also demonstrate how to make preserved lemons – a classic flavouring in Morocco. \nOur workshops are fun and informal\, our tutors will support you to prepare the recipes. We’ll chat about the Moroccan way of eating\, and we’ll try some mint tea to complete the experience. \nAll recipes are suitable for vegetarians. SUMMARY:Introduction to sourdough baking
DESCRIPTION:This workshop is an introduction to baking with wild yeast to create sourdough bread and baking. \nOur class is all about getting started with sourdough baking. We’ll discuss the fundamentals of baking with wild yeasts\, we’ll look at the methods of creating a sourdough starter and how to look after it. We’ll send you instructions on how to make a starter to bring to the workshop so that we can discuss (but don’t worry we’ll have some pre-made starter for you to use). \nThe workshop is a practical\, hands-on session: \n\nYou’ll bake a loaf using our sourdough starter;\na sourdough cake.\nAnd sourdough pizza for lunch.\n\nWe’ll also make and taste sourdough fizz and discuss recipes for using the discarded starter. \nThe workshop lasts for 5 hours as sourdough making is a slow process to allow the natural yeasts to work. There will be plenty of time to discuss\, taste and ask questions. DESCRIPTION:This workshop will focus on a plant-based approach to create two delicious dishes. You might be new to the idea of vegan cooking or looking for new ideas to increase your range and inspire you to try a different approach. \nIn our fun and informative workshop\, you’ll learn some basic recipes that you can then adapt at home to create a variety of options. SUMMARY:Festive baking - stollen and Christmas treats
DESCRIPTION:Few can resist the delicious smells of festive baking: ginger\, cardamom\, cinnamon\, cloves\, and nutmeg. This workshop is an introduction to baking for the festive season – using a range of techniques to create traditional treats and bakes with a seasonal twist. You’ll also be ahead of the game at this busy time of year too. \nWe’ll make: \n \n\nChristmas Stollen: you’ll bake a classic\, festive stollen full of dried fruit\, marzipan\, and spices. We’ll take a step-by-step approach learning skills and techniques you can use when baking at home.\nFestive spiced shortbread: using traditional ingredients along with festive spices.\nPistachio biscotti: traditional Italian biscuits\, adding a different note to the festive season with the bright flavour and colour of pistachios.\n\nThe workshop is hands-on\, and we’ll make everything from scratch. You’ll learn some basic recipes that you can then adapt at home to create different options. The course is suitable for beginners and people with some experience interested in trying out something new. \nWe’ll look at the ingredients\, techniques and how to feel confident when baking. DESCRIPTION:Join us in our spacious and welcoming Lang Spoon Community Kitchen for a fun and informative workshop where you’ll learn how to make and perfect two staples of Italian cuisine – pasta and gnocchi. \nPasta only requires a few simple ingredients to make and a few simple steps to cook. With gnocchi\, the key to perfection is finding the right potato to make them with (floury not waxy varieties). Once your creations are made there are endless and delicious ways to enjoy them! \nWe’ll teach you the basic techniques and give you the confidence to experiment at home. \nWe’ll mix and knead our dough\, using flour and fresh eggs\, to create silky smooth pasta sheets that we’ll turn into ravioli. \nWe’ll create light and fluffy gnocchi that are the perfect comfort food for a cosy evening at home. \nWe’ll make:   \n\nSpinach and ricotta ravioli: filled pasta and a great introduction to pasta making.\nPotato gnocchi: a simple dumpling dressed with a light sauce that has existed since Roman times.\nSage and brown butter sauce: a warm buttery sauce with the addition of fresh sage leaves.\n\nWe’ll discuss variations you can try out and suggest sauces to go with these. DESCRIPTION:Sicilian cuisine is a fusion of Mediterranean flavours influenced by Italy and North Africa. It also includes elements of other cultures of previous inhabitants including Spanish\, Arab and Greek influences. This leads to an intriguing mix of flavours and styles of cooking and gives us much to explore! \nThe island is mostly self-sufficient with a year-round growing season\, meaning it grows a large amount of the produce consumed – everything is fresh and local\, in season and full of flavour. \nJoin us for our Taste of Sicily workshop where we will make three authentic dishes and discuss how they can be adapted to include seasonal ingredients. \n\nArancini – balls of risotto rice stuffed with mozzarella cheese\, coated in breadcrumbs and fried\nCaponata – a delicious stew of aubergines\, peppers and tomatoes with a sweet/sour flavour\nBignolati – stuffed bread with Swiss chard\, olive and potato filling\n\nWe’ll also demonstrate and taste pesto alla Trapanese made with tomatoes and almonds\, foods local to Sicily. \nOur workshops are fun and informal\, our tutor will support you to prepare the recipes\, we’ll chat and answer questions as we go. \nWe’ll look at the ingredients and techniques – and basic principles so you can adapt recipes the to include variations. Light refreshments and snacks will be provided. \nThe course is hands-on\, making our creations from scratch and there will be time to discuss\, taste and compare notes. \nThe course is suitable for beginners and people with some experience who are interested in trying out something new. Please bring 3 containers to take your creations home. \nAll recipes are suitable for vegetarians and can be adapted for vegans. DESCRIPTION:The food we buy and eat has an impact on Climate Change in many ways. In this 2-part programme of workshops we will look at how we can make more climate-friendly food choices in our daily lives. Join us for our Plate Up for Fife workshop programme where we will focus on two themes: \nWorkshop 1: Reducing our food waste – Thursday 26th September – 6pm – 8pm. We will be talking about common foods that get thrown away and exploring ways to change that. You’ll also be making a dish with leftovers! \nWorkshop 2: Eating locally and seasonally – Thursday 3rd October 6pm-8pm. We’ll be talking about the benefits of eating with the seasons and ways to access local ingredients and you’ll make a dish using seasonal vegetables. \nWe’ll also be discussing ways we can reduce our meat and dairy consumption\, reduce packaging and eat healthily. It’s important to attend both workshops to get the full benefit of the programme. Please do not book if you have attended a Plate Up for Fife Workshop in the past. \nThere will be lots of information to share about the workshop topics to help generate discussion and have fun learning from each other! \nPlate Up for Fife is part of Climate Action Fife – a Fife-wide partnership project\, bringing together individuals\, communities\, local government and businesses to tackle the climate emergency. SUMMARY:Plate Up for Fife
DESCRIPTION:The food we buy and eat has an impact on Climate Change in many ways. In this 2-part programme of workshops we will look at how we can make more climate-friendly food choices in our daily lives. Join us for our Plate Up for Fife workshop programme where we will focus on two themes: \nWorkshop 1: Reducing our food waste – Thursday 26th September – 6pm – 8pm. We will be talking about common foods that get thrown away and exploring ways to change that. You’ll also be making a dish with leftovers! \nWorkshop 2: Eating locally and seasonally – Thursday 3rd October 6pm-8pm. We’ll be talking about the benefits of eating with the seasons and ways to access local ingredients and you’ll make a dish using seasonal vegetables. \nWe’ll also be discussing ways we can reduce our meat and dairy consumption\, reduce packaging and eat healthily. It’s important to attend both workshops to get the full benefit of the programme. Please do not book if you have attended a Plate Up for Fife Workshop in the past. \nThere will be lots of information to share about the workshop topics to help generate discussion and have fun learning from each other! \nPlate Up for Fife is part of Climate Action Fife – a Fife-wide partnership project\, bringing together individuals\, communities\, local government and businesses to tackle the climate emergency. It is funded by The National Lottery Community Fund’s Climate Action Fund. This workshop is also part of Fife Climate Festival. \nThis is a hands-on cooking class where you will be touching\, tasting\, and cooking food. SUMMARY:Taste of the Levant - traditional Meze
DESCRIPTION:Levantine cuisine is a mix of culinary traditions from an area of the Middle East broadly made up of Lebanon\, Syria and Jordan. The cuisine has been influenced over years by various cultures and civilisations including the Greeks\, Romans\, Ottomans and Arabs. It is noted for fresh\, locally sourced ingredients\, grains\, spices and olive oil\, legumes and vegetables along with fish\, dairy and wine. \nJoin us for our Taste of the Levant workshop where we will make 3 authentic meze dishes. \n\nFul medames – a stew made of fava beans cooked with tomatoes\, herbs and olive oil\nBaba ghanoush – a dip made from baked aubergine flavoured with garlic and lemon.\nKhubz – a Lebanese pitta bread\n\nWe’ll also demonstrate how to make quick pink pickled onions to go with your dishes. \nAll recipes are suitable for vegans and vegetarians. SUMMARY:A taste of the Mediterranean – Exploring the Blue Zone way of life
DESCRIPTION:Join us for our Taste of the Mediterranean workshop where we will make 3 authentic dishes and discuss the Blue Zone approach to food and life. \nThe Mediterranean has two of the world’s five Blue Zones – areas where people live longer and are healthier. In part this is due to their diet and the ingredients they use which includes lots of fruit\, vegetables and legumes\, olive oil and wholegrains. Using fresh and seasonal ingredients to bring out the natural flavour of the dishes. The cuisine is made up simple ingredients that are local to the region. \nIn this class we will make… \nMinestrone longevity soup – made with seasonal vegetables\, beans and olive oil \nBriam – Greek mixed roasted vegetables \nFlatbreads – quick pita breads made with yoghurt \nWe’ll also demonstrate and taste an easy bean and artichoke dip. \nAll recipes are suitable for vegans and vegetarians. SUMMARY:Adventures in fermentation – fermented drinks
DESCRIPTION:Our workshop will introduce you to making nourishing fermented drinks\, flavoured with seasonal ingredients\, that are great for your gut. We’ll explore how fermentation works with a mix of discussion and practical hands-on activities. \nhomemade kombucha – we will introduce you to the SCOBY and discuss how to look after it so that you can keep making this delicious drink at home. We’ll taste a few flavour combinations to encourage you to experiment with your own ideas. \nkvass – We will try this drink and discuss how to use sourdough starter to make this tasty drink. SUMMARY:A taste of Southern India
DESCRIPTION:Southern India’s fertile climate produces an abundance of fruits\, vegetables\, and seafood\, which influences its vegetarian and pescatarian-based cuisine. Coconut milk and hot spice blends add depth to dishes. In this workshop\, you will explore and make two regional dishes: \nSouth Indian style samosa – A vegetable based samosa made with a blend of delicious spices. \nKerala fish curry (Kerala): A tantalizing blend of fresh catch simmered in coconut milk\, infused with fiery spices\, and served with aromatic coconut rice. \nWe will also demonstrate a simple cucumber raita to accompany these dishes. \nThis workshop will be led by Jackie Vural\, an enthusiastic cook of many cuisines with a passion for breadmaking. DESCRIPTION:Did you know that humans have been fermenting food for over nine thousand years? This ancient practice has developed over the years. Today it can be used to reduce the risk of diseases and enhance your digestive system. This workshop will introduce you to making nourishing and seasonal ferments that are great for your gut. \nYou will… \n \n\nExplore how fermentation works with a mix of discussion and practical hands-on activities.\nLearn how to introduce fermented foods to your diet in easy and accessible ways.\nTaste fermented foods and discuss the benefits for our health and wellbeing\, this will include seasonal kraut and kimchi.\nMake kimchi\, sauerkraut and a seasonal veg ferment to take away\, along with recipes and suggestions so that you  can experiment at home.\n\nThis workshop will be led by Jackie Vural\, an enthusiastic cook of many cuisines with a passion for bread making. DESCRIPTION:The food we buy and eat has an impact on Climate Change in many ways. In this 2-part programme of workshops we will look at how we can make more climate-friendly food choices in our daily lives. Join us for our Plate Up for Fife workshop programme where we will focus on two themes: \nWorkshop 1: Reducing our food waste -Thursday 23rd May- 6pm – 8pm. We will be talking about common foods that get thrown away and exploring ways to change that. You’ll also be making a dish with leftovers! \nWorkshop 2: Eating locally and seasonally – Thursday 30th May 6pm-8pm. We’ll be talking about the benefits of eating with the seasons and ways to access local ingredients and you’ll make a dish using seasonal vegetables. \nWe’ll also be discussing ways we can reduce our meat and dairy consumption\, reduce packaging and eat healthily. It’s important to attend both workshops to get the full benefit of the programme. We’ll be talking about the benefits of eating with the seasons and ways to access local ingredients and you’ll make a dish using seasonal vegetables. \nWe’ll also be discussing ways we can reduce our meat and dairy consumption\, reduce packaging and eat healthily. It’s important to attend both workshops to get the full benefit of the programme. DESCRIPTION:Our kids cooking club is back for the Easter School holidays. \nSpring has sprung and there are lots of wonderful fresh ingredients available right now. We will use some of these to make two tasty dishes together. In this class we are using cauliflower and spring onions \nYou will make: \nVegetable Baked Korma – This is a mild curry that is made in one pot. You can cook and share this with your family and make it as spicy as you like. \nEasy banana pancakes – this is a great breakfast recipe to use up bananas that have gone squishy. It is super easy to make and the pancakes come out nice and fluffy. They could also be used for a school snack. \nThe kids cooking club encourage children to learn new skills in a fun and friendly environment. SUMMARY:A taste of Spain - traditional tapas
DESCRIPTION:Traditional tapas are sharing plates of appetisers/snacks that are eaten in the company of family and friends. It’s a sociable occasion usually accompanied by cold drinks. \nJoin us for our tapas workshop where you will learn to make 3 delicious and authentic Spanish small plates. \n\nTortilla espanola: slow cooked potato omelette\nAlioli: garlic sauce to accompany the tortilla\nCroquetas de jamon/Croquetas de queso: croquettes made with ham or cheese\n\nWe’ll also demonstrate how to make Romesco sauce and taste it served traditionally with griddled spring onions. We’ll try some Spanish cheese and olives to complete the tapas experience. \nAll recipes are easily adaptable for vegetarian and vegan diets. \nOur workshops are fun and informal\, our tutor will support you to prepare the recipes.
