DESCRIPTION:A wide range of spices are used to flavour Indian Cooking and differ across regions and homes. A Garam Masala is an essential blend of warming spices that are roasted and ground. In this workshop\, you will explore the spices used\, and create your own unique garam masala blend to suit your personal taste. DESCRIPTION:Further to the Government’s recent update on COVID-19\, we have taken the decision to postpone all of our events from now until the 31st May. Full refunds will be given. \nWe are reviewing the situation daily and will give regular updates on future events\, including new dates for postponed events. \nOn our fun and informative workshop you’ll learn some basic recipes that you can then adapt at home to create a variety of options. We’ll discuss foraging and how to identify which greens to use to make delicious seasonal bakes. We’ll also spend some time discussing the best herbs for cooking with – and how to grow them at home. You’ll see some examples growing in our garden at the Lang Spoon. \nWe’ll make a Greek style wild greens filo pie (hortopita) using a range of seasonal greens foraged locally. We’ll also make cheese and herb spiral buns using herbs and wild garlic from our gardens. \nThe workshop is hands-on – we’ll make the pie using filo pastry and the yeasted buns from scratch. We’ll talk about ingredients and techniques and there will be plenty of time to discuss\, ask questions\, taste and compare notes. \nThe course is suitable for beginners and people with some experience interested in trying out something new. In this workshop\, join our Community Chef Iain to learn how to make delicious\, specialized breads. \nThe class will start with making dough\, then progress onto turning it into stuffed paratha from Indian\, luxurious focaccia bread with various classic toppings from Italy and Maneesh\, a Middle Eastern bread topped with sesame seeds and herbs. You’ll also make a marmalade and malt loaf bread and butter pudding – a great way to use up leftover bread. Pulses are also very sustainable and recognised as a “super food” so we will look at ways of using different beans and pulses in our diets. In the workshop you will learn the basics of making a good stock that will add depth and flavour to a range of dishes (vegetable or meat stock option); use a stock to make a seasonal soup; followed by learning how to use stock in gravies\, sauces and jus. You’ll leave inspired and ready to experiment at home. \nChoice of soup to make – Smokey Cullen Skink or White bean and Truffle Oil. \nDemonstration and practical exercise of “Mother Sauces”- Bechamel\, Veloute\, Espagnol\, Tomato and Hollandaise. \nAt the end of the class participants with have stocks\, soups and sauces to takeaway. Full refunds will be given. \nWe are reviewing the situation daily and will give regular updates on future events\, including new dates for postponed events. \nThe cuisine of the Middle Eastern countries is diverse but they also share many similar ingredients but cooked or flavoured differently. \nIn this workshop join Jenny Thomson from Courses for Cooks where we’ll use common flavours from that area: sumac; preserved lemon; mint; and more\, to create delicious food for you to make and eat. \nWe’ll be making the following dishes: \nSpinach & Sumac Turnovers (Vegetarian) \nBaked Aubergines\, with lamb (gluten free) or with couscous (vegetarian) \nCarrot salad with cumin & preserved lemons (vegetarian & gluten free) \nThe workshop will be led by an experienced chef with plenty of time to discuss tips and compare notes too. DESCRIPTION:This workshop is an introduction to Scandinavian baking with a sweet yeasted dough and a traditional crispbread. \nWe’ll make fragrant Scandinavian style cinnamon buns to have for fika (afternoon tea) and a multi seeded rye and oat crispbread to eat with hummus or cheese. \nOn our fun and informative workshop you’ll learn some basic recipes that you can then adapt at home to create a variety of options. \nWe’ll look at the ingredients and techniques – and how to fit baking into your life. \nThe course is hands-on – we’ll make our enriched dough and then shape and create it into cinnamon buns. We’ll try out different flours\, seeds and spices to create a unique version of the traditional crispbread. There will be time to discuss\, taste and compare notes. \nYou’ll leave inspired and ready to experiment at home. \nThe course is suitable for beginners and people with some experience interested in trying out something new.
