DESCRIPTION:From Tortellini in Brodo in the north to Puttanesca in the south\, Italy boasts a variety of pasta dishes. Flavours can be robust and spicy or mild and soothing. Drop it in a soup\, bake it\, or serve it with sauce. Pasta is diverse and always delicious\, making it one of the world’s favourite foods. \nIn this class we will begin by making a fresh batch of pasta. You will then use this to prepare two dishes. \nTortellini- stuffed with a butternut squash filling then folded by hand. This pasta\, once you master the folding technique\, can be used in a range of dishes. \nLasagne- take this family favourite to the next level with your fresh pasta. A rich beef or lentil ragu\, béchamel infused with bay leaves and cloves then construct to take away and enjoy at home \nThis is a hands-on cooking class. All dishes made can be taken away and enjoyed at home. DESCRIPTION:We have some amazing seafood here in Fife\, and Scotland has some of the best in the world. While a lot of it is exported\, it could be enjoyed more here in Scotland. SUMMARY:Pickling and Fermenting
DESCRIPTION:In this class you will create your own flavour combinations as you learn effective and safe methods for pickling and fermenting foods.\n\n\n\n\n\n\n\n\nUsed to preserve food for long journeys\, especially by sea\, these techniques can be traced back to ancient times (approx. 2500BC). With interests in seasonal cooking on the increase*\, methods such as these have grown in popularity. \n• Piccalilli (mustard pickle from Asia) \nThis homemade version is very versatile and much different to shop bought. You will add and control your own complex flavours to suit your taste. \n• Kimchi (a tangy\, fermented sauce) \nThis popular Korean staple is a good starting point to learn about fermentation. As it matures the flavours develop to give it a real spicy kick. \n• Beetroot Chutney (an Indian sauce) \nChutneys are a great way to use up many things that you have in abundance\, and an exciting way to experiment with different flavours. Getting the balance of sweet and sour is the key. \n  \nIn the class we will have a tasting session letting you taste different pickles and fermented products. DESCRIPTION:In this class you will be introduced to the Spanish style of cooking\, Tapas\, which has become very popular here in the UK. Tapas comes from the Spanish word “tapar”\, which means “to cover” or “lid”. Traditionally they are small savoury dishes\, snacks or appetisers. Being really popular\, they are a great way to enjoy many different flavours as a snack or main meal all at the same time! DESCRIPTION:Inspiration for a delicious plant-based dinner party to impress your family and friends.\n\n\n\n\n\n\n\n\nSharing food is a great way to get to know people and catch up with friends and family. While we move towards increased flexibility in our lives\, we can think more about eating with others. \nIn this workshop we will prepare a three-course meal for four people that will be easy to serve. This menu will appeal to both vegan guests and others that are looking to reduce or avoid meat and dairy. Let us show you how delicious a plant-based dinner party can be. \nOn the Menu\n\nMoroccan Style Hummus and Flatbreads: Hummus when made well is a really tasty dish. We will be using North African flavours and making homemade flatbreads to serve with it.\n\n\nOven Baked Mushroom Lasagne: This lasagne will be assembled in the class ready to go into the oven. DESCRIPTION:A workshop will take you on a journey through the main flavour influences of Asian food. These flavours come from India (curries and spices) in the west\, China (seasonings and cooking methods) in the east\, and the Americas (chilies). In this workshop you will learn how to create key dishes from Asian cuisine: \n\nLaksa – Laksa is a noodle soup from Southeast Asia. It’s fragrant flavour is defined by the paste created to dilute the broth This dish can be made with chicken\, prawns or vegetables (Vegan)\nDal Makhani with Punjabi Aloo Parathas – A luxurious black lentil and kidney bean dal dish with a delicate balance of flavours. SUMMARY:Plate Up for Fife (2-part workshop)
DESCRIPTION:Leading up to COP26\, we want to look at how we can make more climate-friendly food choices. Join us for our Plate Up for Fife workshop programme where we will focus on two themes: \nWorkshop 1: reducing our food waste on Tuesday 26th October 6pm – 8pm. We will make homemade vegetable stock and savoury bread and butter pudding. \nWorkshop 2: eating locally and seasonally on Tuesday 2nd November 6pm-8pm. We will make parsnip\, fennel and apple soup and roasted vegetables. \nWe’ll also be talking about ways we can reduce our meat and dairy consumption\, reduce packaging and eat healthily. It’s important to attend both workshops in our Lang Spoon Community Kitchen\, 8 East Fergus Place\, Kirkcaldy. \nWe’ll be trying out recipes using local and seasonal food\, and our Community Chef Iain will demonstrate skills for using up leftovers and reducing food waste. There will be lots of information to share about the workshop topics to help generate discussion and have fun learning from each other! \nPlease bring some containers to take home your food. SUMMARY:Plate Up for Fife (2-part workshop)
DESCRIPTION:Leading up to COP26\, we want to look at how we can make more climate-friendly food choices. Join us for our Plate Up for Fife workshop programme where we will focus on two themes: \nWorkshop 1: reducing our food waste on Tuesday 26th October 6pm – 8pm. We will make homemade vegetable stock and savoury bread and butter pudding. \nWorkshop 2: eating locally and seasonally on Tuesday 2nd November 6pm-8pm. We will make parsnip\, fennel and apple soup and roasted vegetables. \nWe’ll also be talking about ways we can reduce our meat and dairy consumption\, reduce packaging and eat healthily. It’s important to attend both workshops in our Lang Spoon Community Kitchen\, 8 East Fergus Place\, Kirkcaldy. \nWe’ll be trying out recipes using local and seasonal food\, and our Community Chef Iain will demonstrate skills for using up leftovers and reducing food waste. There will be lots of information to share about the workshop topics to help generate discussion and have fun learning from each other! \nPlease bring some containers to take home your food. DESCRIPTION:In this workshop you will explore the flavours of Thailand and make some authentic dishes\, including a classic Thai Green Curry. All dishes made can be taken away and enjoyed at home\, and will be suitable for a plant-based diet. You’ll see some examples growing in our garden at the Lang Spoon. \nWe’ll make a Greek style wild greens filo pie (hortopita) using a range of seasonal greens foraged locally. Full refunds will be given. \nWe are reviewing the situation daily and will give regular updates on future events\, including new dates for postponed events. \nAs part of our regular workshops for cooks interested in exploring how to switch from meat and poultry in their diet to plant-based ingredients more often\, this class will focus on Mexican food. \nThe Mayan and Aztec cultures have had maize\, beans and squashes at the heart of their diet for thousands of years (known as the three sisters). Pulses are also very sustainable and recognised as a “super food” so we will look at ways of using different beans and pulses in our diets. The course is hands-on and all food prepared at the workshop can be easily recreated at home for family or friends to dig into. DESCRIPTION:Further to the Government’s recent update on COVID-19\, we have taken the decision to postpone all of our events from now until the end of April. Full refunds will be given. \nWe are reviewing the situation daily and will give regular updates on future events\, including new dates for postponed events. \nThis workshop will be led by Iain Mclellen\, Greener Kirkcaldy’s Community Chef and is part of a new programme to help bring success to your home cooking. \nWe’ll be learning the basics of Italian cookery with demonstrations and practical exercises working with fresh pasta\, making cut and filled pastas and showing the simplicity of cooking with fresh pasta. \nWe’ll also be cooking risotto and making arancini from risotto\, as well as making and cooking fresh gnocchi and showing how to use gnocchi in different ways. \nCome along to learn new skills and get an understanding of how basic skills can be used to create many different dishes. \nYou’ll be making food to take home – please bring containers to take home your food. Anyone can come along and you can pay what you feel towards the cost of the meal or help us out with some time on the night. The food will be nutritious and sourced from donations\, vegetables and fruit we have grown\, and from local businesses. \nOur community meals provide an opportunity for local people to meet each other and aim to ensure that everyone has access to affordable food with dignity and choice. \nIf you would like to join us\, come along at 5pm when we’ll be serving food. \nThere is disabled parking on site and The Lang Spoon Community Kitchen is wheelchair and mobility friendly.
